Monday Fun Day

Happy Monday!
Day 7

As some of you know I am still recovering from Whooping Cough and have occasional bad days during the week. So this is why there have been no posts:(  Unlike my daughter, who "accidentally" ate chicken in the pai tai Friday night while out with her meat eating friends, I have been spot on!!! LOL redeeming myself from that first day Philly cheese steak and my daughter graciously evened the playing field!
Over the weekend I had veggie chili, split pea soup (all fresh and homemade) and zucchini / eggplant sandwiches. Yummy!! This morning I had oatmeal pancakes with a cup of mean green.  For lunch
I had a zucchini, eggplant, red pepper and green pepper sandwich on multigrain bread (great harvest bread) with provolone and goat cheese with a sun dried tomato mix that includes fresh tarragon, basil, thyme  and minced garlic + olive oil. YUMMO!! For dinner I made veggie spring rolls.... BLAH!!! GROSS! I think the spring roll sheets I bought were not great quality. I need to find an Asian market. Fixing to have me some more mean green!!!
Overall, I feel great! Energy levels have increased thus far:)

Today was a good non-meat eating day. I was actually able to have lunch, so I had a Mediterranean veggie panini from work. And I had the veggie spring rolls my made tonight, I liked them and added some soy sauce to them, super yummy. And yes I did eat chicken the night I went out but I totally forgot about the whole vegetarian thing :( What's funny is that my friends reminded me! It's harder said than done I guess. But I do feel better today with a little more energy.

Day 2: whoopie woo! :(

Day two: a success as far as NO MEAT! Yeah me!!  Tired:( had veggie sandwich with hummus, veggie chili and zucchini.  Right now I am fatigued from the red devil in my belly and daughter is trying to steal my Menzies!!! She is crying "meat" as I write this!! How will we survive the cycle with no meat?? Simple: we cook lamb!

More like day 159...! Where's the beef?! Argh! Well, I had no meat either and like my mom, I had the veggie chili and at work made a Mediterranean veggie panini...so good. (If you're ever at Great Harvest Bread store in Temecula, definitely try this panini.) Anyway,  I think I'm having sympathy PMS because of my mom, I try not too but my body has a mind of its own. Sorry mom :(  Well, tomorrow is another day, and today was a success even though it didn't feel like it.

Divided we fail...or at least the mother!!

It's not how you begin the race but how you finish it, right??? I sure hope that is the truth because my first day, though filled with moments of progress was also sprinkled with EPIC FAILURE!!  I had planned on having egg whites and veggies for breakfast as part of my slow beginning. I packed carrots for my snack and the vegetarian chili for lunch. Well lunch came with my co worker Jen/ my lunch buddy!! I notice I had not brought her much chili and wondered if she may need a sandwich with it... Long story short we split a Philly cheese steak sandwich!!!! Ugh!!!! What was I thinking? Obviously not about having to display my failure to the world! I don't know how it happened, I went to eat chili and next thing I knew I was eating Philly cheese steak! But on the upside I did eat my carrots, that veggie chili and did stick to my Zuchinni Gratin for dinner which was fabulous btw. I will post recipe later:)

Wow, well unlike my mom, I did make it through the day without meat. But even though she fell unknowingly to the temptation, I also came close. As I stood there grilling hamburgers for my younger siblings, I kept thinking "No one is around watching, just take a little bite." But i didn't and I think what helped was having the egg whites with bells in the morning, the chilli for lunch, carrots and hummus as a snack, the zuchini gratin for dinner....oh yes, and LOTS of H2O!!!  So to celebrate my first day and help mom cope with the earlier indulgence we end the night with a cup of hot chocolate. First day...success! (Don't worry mom, my day will come)

Me Vegetarian!!???? What the!!???

My daughter and I have played around with the idea of going vegetarian.  We have often wondered if we would feel any benefits "health" wise from daring to ditch the meat, junk foods and the "bad" carbs. I am scared! Lol can we do this???  May I say this may be a slow beginning!

Tonight we made a vegetarian chili and may I say it is the bomb diggity!! We are in the process of cooking a zucchini gratin made with zucchini, onion, spices and Gruyere cheese, which may I say is the smelliest cheese I have ever smelled! That cheese my friend will clear a room! I am a tad bit scared of the out come.

So far the chilli is to die for! I actually love this chilli better than my dad's that he cooks with meat. The zucchini, like my mom said, is stinky!!! But hopefully it turns out delicious. I'm excited to take this journey with my mom. I know this will be a fun experience, making memories trying new vegetarian dishes. Hopefully, at the end of this journey we will both celebrate with some meat (jk mom), I mean with a healthier outlook on life and know that we conquered MEAT together.
